Job Summary

The Campus Dining Services (CDS) department with CU Boulder is nowencouraging applications for a Bakery Sous Chef! This is ahands-on culinary position providing oversight, leadership andinput in their assigned dining location and overall dining serviceswhen needed. The Sous Chef will provide input for new and existingproducts/menus/recipes and test them to ensure accuracy ofingredients, methodology, yield, authenticity and quality. Theywill also assign, delegate, and supervise standardized recipepreparation, ensuring that quality, A9 and food safety-standardsare being followed. Additionally, they will supervise the work ofothers in the kitchen, including reviews and performance plans, andwill create schedules based upon organizational needs and staffschedules.

What Your Key Responsibilities Will Be

Quality Assurance

  • Provide and ensure customer service standards are met inassigned functional area.
  • Offer recommendations and solutions to the Executive Culinaryteam to improve daily operations of functional area.
  • Actively contribute to menu development with Executive Culinaryteam, which includes oversight of inventory and recommendingpurchasing needs specific to the functional area/kitchenneeds.
  • Serves on the food safety response team and responds to allfood safety emergencies as appropriate to the work assignment.

Personnel

  • Assist in the culinary staff selection, training and onboardingprocess.
  • Assist in creation of standardized operating procedures andstaff training method
  • Empower others to make decisions in areas within their span ofcontrol.
  • Ensure employees follow assigned schedule, appropriate breaktimes and follow proper procedures of requesting time off.
  • Responsible for performance management for employees and holdthem accountable. Meets performance and HR deadlines.
  • Follows progressive coaching processes and presents staffissues to Executive Culinary Team/HR to assess any neededaction.
  • Report workplace injuries and follows departmental HRprocesses. Display and demonstrate thoughtful and timelycommunication skills.

Kitchen Prep/Operation and Production

  • Ensure all areas are setup and broken down in accordance withSOP's.
  • Personally inspects and has thorough understanding of operationand maintenance of equipment, and place work orders for equipmentin need of repair.
  • Hands-on production of menus as assigned by prepping, cooking,baking and otherwise assembling standardized recipes.
  • Ensures all ParTech and A9 labeling procedures are followedduring schedule shift and determines corrective action when out ofcompliance.
  • Leads work flow of assigned staff and production.
  • Makes service decisions based on product outages and menuchanges.
  • Assist with ordering and receiving of product as need.
  • Pass State Food Safety Manager Level Certification and offerstutoring assistance to staff.
  • Understands and ensures all sanitation regulations and safetyprotocols.

What We Require

  • 4 years of experience related to the job assignment. Equivalentcombination of education and experience may substitute.
  • Servsafe certified and or certificate appropriate for theposition level or the ability to obtain Servsafe certification orcertificate appropriate to position level within 6 months ofhire.
  • Must possess appropriate Servsafe certification or certificateappropriate to position level for the duration of employment withCDS.

What We Would Like You to Have

  • 2 years experience in fast paced high volume university orinstitutional food service bakery operation.
  • Proven Leadership and Supervisory experience.
