Ingredients needed to make Mexican Chicken Casserole with Doritos

• 1 package, 11 oz, nacho cheese flavored Doritos
• 3 cups cooked and cubed chicken
• 2 cups shredded mexican cheese, divided
• 1-½ cups salsa
• 1 can, 15.5 oz, black beans, drained and rinsed
• 1 can, 15.25 oz, corn, drained
• 1 can, 10.5 oz, cream of chicken soup
• 1 cup sour cream

Directions For Easy Mexican Chicken Casserole with Doritos

Frist, preheat your oven to 350 degrees F and grease a 9x13 baking pan with nonstick cooking spray.

Crush half of the bag of chips and place into the bottom of the prepared baking pan.

In a mixing bowl, combine chicken, 1 cup cheese, salsa, beans, corn, soup and sour cream and mix well.

I mean, really mix it well!

Spoon on top of chips in the pan and spread evenly.

Bake for 20 minutes. Remove our casserole from the oven and top with remaining cheese and chips.

Then return the pan to the oven for 5 minutes or until the cheese is melted.

Let your Mexican chicken casserole with Doritos stand for about 10 minutes before serving.

I would say if you don't plan to eat all of it in one sitting to do the following:

Add the cheese to the top and melt it. Then serve it with the remaining crushed chips. Because when you re-heat it, the chips lose their crunch!

This has good flavor and is hearty.
