This cinnamon sugar chex mix is crunchy cinnamon goodness. Seriously, I can not keep my hands off of this stuff! I have such a love for absolutely anything and everything cinnamon sugar-related. The sweet cinnamon sugar combined with the buttery cereal is so amazing! TOTAL taste bud explosion.

This chex mix is so easy and will take you literally 5 minutes to make! So easy and so perfect for those last minute "omg! we're leaving soon and I don't have anything to bring!" moments. That sure happens to me a lot and this is sure to be a favorite where ever you go! The best part is, if you have the cereal, you most likely have everything else on hand too! Just 4 ingredients: rice chex cereal, butter, granulated sugar and cinnamon.

Ingredients

  • 4 cups Rice Chex Cereal
  • ¼ cup unsalted butter melted
  • ¼ cup granulated sugar
  • 1 teaspoon cinnamon

Instructions

  • Line a large baking sheet or plate with wax paper, parchment paper or paper towels. Set aside.

  • In a large bowl, measure cereal and set aside. In another smaller bowl, measure cinnamon sugar, set aside.

  • Melt butter. Pour over cereal and stir until all cereal is completely covered. Microwave for 2 minutes, stirring after 1 minute. Add cinnamon sugar one half at a time stirring extremely well between each addition. Microwave whole mixture again for 1 minute. Pour on to prepared lined sheet and spread out to cool.

  • Store in an airtight container for up to 5 days.

    Easy & delicious! Perfect after school snack for my boys, and not as sugary (or time consuming) as some of the other similar recipes I saw on Pinterest. Took about 5 minutes to make, easy cleanup, & (surprisingly) the Chex were still crunchy coming out of the microwave! Will definitely make again. Thanks!

    Made it, ate it, loved it!!! I quadrupled the recipe because I was making it for my students as an end of the school year treat and they loved it too but it was not enough to feed my hungry high schoolers. They begged me to make more so sure enough, I will be heading to the grocery store shortly. Thank you for such an easy, tasty, easy(Have to say it twice because it's so easy.), and simple treat. I will definitely be keeping this in my dessert/snack recipe rotation. You and your recipe are amazing!

    This looks delicious! Making it for the first time and wondering what the thinking is behind Microwaving it. Does this help the butter soak into the cereal, or does this help it just have a more finished baked taste? Thank you! 🙂

    I made these a few minutes ago and though they were a bit on the hot side I did "sample' a couple. I didn't have any Chex cereal in the house but I DID have 2/3 of a box of Life cereal sitting around. Talk about an amazing treat! I love anything sweet salty so as a small test I sprinkled a tiny bit of sea salt on a small section once I had it spread out to cool - I'm so glad I did- its just the perfect blend lol. I can see myself making this often for those long nights when you just need something to snack on 🙂 I was so glad to see all the positive reviews from people who actually tried making this. One of my biggest pet peeves is reading the reviews to see how it turned out only to find people saying, looks good, must try this, pinned for later, have to make this soon - why the heck would you leave a review if you haven't actually made it yet??? Thanks for a great snack!

        I have to agree, Jane! That’s a pet peeve of mine, too! I DID try these, and they’re great! Less messy to make than the puppy chow version. I didn’t spread them out to cool and it was fine.
